It's been 1 year since you left us. Some days it seems like 100 years, some days it seems like yesterday. So many things have happened.<br />

I don't think so...My Life By Design. It's kind of funny when you think about it. At first it was just a cute play on words about my life and how I design my home. But after these last six months, it's kind of taken on a deeper meaning. When you're creating your home, you're in control, planning things out just how you want them to be. But in life, it's different.<br />

After 38 years, this last year has probably taught me the biggest life lesson – you can't design your life. You can plan, you can hope, you can act – but things will happen that are beyond your control. Good things, bad things, things you never imagined.<br />
<br />
2014 was poised to be a great year. You see, 14 is my lucky number. This was the year that everything I wanted would happen. But almost as soon as the new year rang in, it all started to fall apart. <br />

My brave mother who beat breast cancer was rocked wight he news that her cancer had returned, only this time in her liver. As fast as we could wrap our minds around the news, she progressively got worse. Treatment after treatment didn't work and slowly we began to realize, this cancer fight was going to be different. This fight wasn't going to end the same way. It's something I think my mom knew from the beginning but something the rest of us didn't want to face.<br />
<br />
I just kept telling myself it would get better, the next treatment would work, the tumors weren't that big, she couldn't leave us - she was too good.<br />
<br />
But then she did. On March 28th, my mom died.<br />

That sure as hell wasn't part of the life I designed for myself in my head. My mom was supposed to be around for a long time. We had a plan. She would retire and then help me take care of my kids. It was always our plan. Unfortunately, plans change.<br />

But life doesn't stop, even when you want it to. Because at the same time we found out my mom was sick, I found out I was pregnant. Something we had been hoping and trying for for 3 years. Naively, I thought that this baby would help heal her and that there was no way that she would pass before seeing my baby. But she did. It wasn't - and still isn't - fair that something my mom wanted as much as I did, she wouldn't be around to experience. </div>

I know that there is probably some cosmic reason for this happening. But I just can't get there yet. It's hard for me to understand how someone so good and loving and selfless could be taken from us so quickly and at such a crucial time in life. I just have to keep the faith that one day we will see each other again and I will finally have the answers I seek. </div>

So much has happened since then and even before then that I am not 100% certain I am ready to talk about on the blog just yet. Let's just say, 2014 has really turned my world upside down. "Oh Jenna, you're just being dramatic," you're probably thinking. I assure you, I am not. <br />

But I can tell you, these changes are bringing up some exciting opportunities for blog posts, so you can look forward to some new home projects in the coming months.<br />

I've added another recipe to my dinnertime arsenal: Ground Beef Stroganoff. It's a classic and I forgot how much I enjoy it. Here's a simple recipe that will sure to have your family asking for seconds.<br />

<b><u>Ground Beef Stroganoff</u></b><br />
1 1/2 lbs ground beef<br />
2 Tbsp flour<br />
1 1/4 tsp salt<br />
1 1/4 tsp black pepper<br />
1/4 tsp paprika<br />
1/2 cup chopped onion<br />
1/8 cup butter<br />
1 can cream of mushroom soup<br />
1 cup sour cream<br />
1 bag egg noodles<br />
<br />
In small skillet, cook onion in butter until golden. In a large skillet, combine meat, flour, salt, pepper and paprika. Add the cooked onions and brown meat. Add cream of mushroom soup and cook for about 5 minutes. Add sour cream and heat thoroughly.<br />
<br />
About the time your meat is browned, bring a pot of water to a boil then add the egg noodles and cook to the direction on the package.<br />
<br />
Serve ground beef over noodles. I topped it with a little sprinkle of fresh parmesan and served with a garden salad.<br />

Then I pour the beer over the top. Any beer will do, but I always choose a more full-bodied beer for flavor. Then I fill up the bottle with water and pour that in as well. Cook on low 5-7 hours or 3-4 on high. The beef should just shred apart with a fork at this point. Salt and pepper to taste.</div>

We had a lot left over, so a couple days later I spread crescent rolls on the bottom of a casserole dish, added in the leftover stew and topped with mashed potatoes. Bake at 350 for 20-25 minutes. </div>

Whenever we have guests, we inevitably end up hanging in the kitchen, so we always thought it would be nice to have some bar stools for extra seating. Problem was, all of the stools we found were either fake wood veneer or waaaaaay too pricey for what they were. Then I spotted these puppies on Joss and Main for $80/pair. Done and done. </div>

Assembly wasn't too bad. It took a little elbow grease to get the screws in there securely, but they seem to be just fine. And I only sustained a few injuries.<br />

3 Chicken breasts</div>

When choosing your cheese for the mixture, I used the shredded, bagged parmesan, not the powdery, grated cheese in the canister. I think it gives it a better texture and it gets nice and crispy towards the end of cooking. I even toss it under the broiler for a few minutes to make it even crispier. It's really easy to make and so flavorful for so few ingredients. We're trying to have less carbs with our dinner so the meat and vegetables need to have flavor, and this recipe hits a home run. </div>

It's no secret that I love a good slow cooker recipe, especially in the winter. Sundays are usually our crockpot days. This past weekend, when my husband requested white chicken chili, I knew just who to call... my dad. He has a "world famous" recipe that's quite a hit around the neighborhood. And now I'm sharing it with you. </div>

<b>BIG ED'S WHITE CHICKEN CHILI</b><br />
1 1/2 lb boneless chicken breasts<br />
1 cup dried Great Northern beans, rinsed<br />
1/2 medium onion, diced<br />
2 cloves of garlic<br />
2 tsp dried oregano<br />
1/2 tsp of salt<br />
2 cans cream of chicken soup<br />
4 cups of chicken stock or water<br />
2 tsp cumin<br />
1 tsp hot sauce<br />
1 can diced green chiles<br />
<br />
Combine all of the ingredients except cumin, hot sauce and chiles in a crock pot. Cook on low for 6 hours or high for 3-4 hours, until chicken is cooked thoroughly. One hour before serving, shred the chicken in the crockpot with two forks and then add in the cumin, hot sauce and can of chiles. Continue cooking. Serve with cheese, sour cream and oyster crackers.<br />

It was met with rave reviews and will now become a strong player in the slow cooker recipe rotation.<br />

Over the holidays I think I ingested roughly 100 lbs of sugar, so I'm trying to eat healthier and cut out desserts. So for lunch today I wanted something substantial but good for me. I know myself better than going from pasta and desserts at every meal to just veggies, it never works. I end up mainlining a bag of hershey kisses and hating myself. So I split the difference and made a small portion of frozen tortellini, roasted brussels sprouts in olive oil and tossed them together with balsamic vinegar.<br />

I have friends from all over the country that I don't get to see very often, so it's nice to see how they and their children have changed over the last year. It makes sense to do a photo card when you have kids but what if it's just the two of you?<br />

The first year we were married, we did a photo card with our wedding photo. Last year, we just sent a regular card and my husband told me he wished we'd sent a picture card. So this year, we did.<br />

I assure you there have been post-worthy things going on, just not enough time to post them. 'Tis the season. Last year we cut down a Christmas tree. This year due to some serious snow, we bought one from a tree lot. It's tall, it's full, it smells great.... and it's dead. Well at least we think.<br />

As soon as we got it home, we put it in water. Then when we moved it into the house, we dumped out the water, I filled it again and that same water has been sitting there for two weeks. Oh well, Christmas is Wednesday, so it will be fine until then. And most importantly, it looks great. I've never had a tree smell so fresh before.<br />

We don't "theme" our trees. I know some people do something different every year and they do look beautiful, but I feel like a Christmas tree should reflect your family. After all, isn't that what Christmas is all about? Making memories with the ones you love? Most of my ornaments are hand-me-downs from my grandmothers, some I have purchased and we have a few that were given to us. I love the idea of having our tree evolve every year as we collect more and more meaningful ornaments.<br />

Speaking of trees, how many of you had one of these ceramic trees in your house growing up? They were super-popular in the 70s and 80s. My mom had one and I was so bummed when she said she got rid of it because it was missing lights. But much to my delight, I found one at a local antique store. And for just $18, I had to snatch it up.<br />

I kept the dining room super simple. Just a jar filled with ornaments and a festive red/bronze/gold runner from HomeGoods. Over in the corner, I added a red and gold ribbon to the plant pot and dressed up some old candles I had with plaid Christmas ribbon.<br />

First brown the ground meet and season with taco seasoning. Next line a casserole dish with tortillas, then layer refried beans, ground meat, cheese, tomatoes and jalapenos.<br />

Top with another layer of tortillas, your favorite salsa and finally cheese. Then bake in a 350 oven for 15-20 minutes. I also put it under the broiler for a few minute to make the cheese a little crisp.<br />

When my in-laws visited, I found the cutest candleholders that had a cork on the end so you could stick them in a wine bottle. It's the only part of the mantel I DIYed this year, and I'll share the how-to in the coming days. </div>

I bought those lanterns two summers ago with the intention of spray painting them and using them around our deck. Yeah..... never got around to that, so there they sat in my office closet. I just bought some $1 red candles and they fill the mantel with Christmas spirit. </div>

I wanted my garland to look really full so I took two strands of garland, folded them in half, wrapped them around the end of the wine bottles and it gave me the look I wanted. Plus it was easier to work with than trying to manipulate it around all of the decorations. Then I added a faux poinsettia, a metal Christmas tree, reindeer stocking holders and the red/green/silver berry garland I've had for a few years. </div>

In our family room we have a beach sunset canvas print on the wall. While it's beautiful, it's not very "Christmasy." So I grabbed a few supplies I had lying around the house and got to work.<br />

I used an old canvas, craft paper and staple gun. You simply wrap the canvas in paper, staple and you're ready for decorating. As far as decorating goes, you can do whatever works with your decor. </div>

I added ribbon to make it look like a package, painted the word Joy in glitter glue, then add glitter. </div>

For a little more sparkle, I added a few snowflake ornaments and it was done. Easy peasy. This one is at the top of our stairs. The one below is the one I created to replace our sunset canvas.<br />

You could cover the actual art you have on your walls this way, instead of using an old canvas, but I would be careful about the hot glue or glitter glue getting onto your print. You could even hit up Thrift stores for cheap canvases to cover.<br />
